Making green tea

  • Green tea bags, leaves or pearls
  • Hot water
  • Honey
  • Lemon juice

Procedure

Step 1: For 1 teaspoon of green tea leaves per one cup of water.

Step 2: Take an appropriate amount of green tea leaves and place them into a tea strainer.

Step 3: Take a pot with water and heat about 180 degree Celsius.

Step 4: Place a tea strainer which is filled into an empty cup.

Step 5: Pour the boiled water on the leaves. Let it be for 2-3 minutes.

Step 6: Leave the strainer and let the water cool down for a few moments.

Step 7: Add honey or Lemon juice for more taste and serve it.

Note:

  • Don’t add any milk into the tea.
  • Avoid sugar because it’s not good for health
  • Adding 2-3 fresh mint leaves gives more minty flavor.
  • You can use green tea bags also.

Simple method on how making green tea with the powder

Green tea powder is easily available in the market. Here, you can see easy and quick ways to make it using green tea powder.

Ingredients used to prepare green tea

  • Green tea powder of 1 – ½ teaspoon
  • 1 cup of water
  • 1 teaspoon of sugar or honey

Step 1: Take a cup of water and use a stainless steel bowl or a glass bowl to heat it. Make sure or remember that that the green tea turns bitter when it is overheated. Make sure to keep a check the temperature. Check that the temperature is about 85 degree Celsius.

Step 2: As soon as water becomes to boil. Switch off the heat and check the boiling point. Let them cool down for a few seconds.

Step 3: Add green tea powder to that water. Let them soak for about 3 minutes. Leave for about 1 ½ minute and check the flavor is strong enough.

Step 4: While steeping the color should be changed to brown. Then, strain the tea powder by using a tea filter or a strainer.

Step 5: If you like, you can drink green tea as it is with any taste. If you don’t like, then you can add sugar or honey to the tea. Mix them well and pour it in a cup. If you like, you can add a pinch of cardamom powder to add taste.

Step 6: Add lemon juice to taste.

Note: Make sure not to add milk to this tea. Avoid adding sugar that is not good for health. If you like, add 2 – 3 fresh mint leaves that gives a minty flavor to the tea. Make sure that the water temperature should be slightly below boiling point that can reduce bitterness. Use green tea bags for quick cup of green tea.

How to get the best cup of green tea?

  • The various green tea powders are available in the market. Try any of the different variants that are used to choose the best one.
  • Choose best quality leaves or powder to get for best taste.
  • You should not add powder to boiling water as it has usually done for our normal black tea.
  • Add powder to water as and when they are hot, but not boiling. The water temperature should be 80 – 85 degree Celsius to make a good cup of tea.
  • Add honey to tea as and when you drink 3 – 4 cups of green tea in a day. This helps to reduce the amount of sugar that you consume each day.

Beerakaya pachadi / Ridge gourd pickle & Tomato pickle recipes – How to make instant pickles with vegetables at home

My home state Andhra Pradesh is very popular for eating spicy food especially pickles. We usually make lot of instant pickles by using vegetables that are mostly consumed within two days. I have used ridge gourd or beerakaya and tomatoes for making instant pickles. These can be eaten with hot rice or as a great side dish for dosa. People follow different ways for preparing instant pickles. Here I have showcased the recipes which are guided by my mom. When these two pickles are cooked by adding right Indian spices it really gives a nice taste.

These pickles need a main ingredient called green chilies. These chilies add spiciness to the chutneys. There is no need of adding red chili powder. Previous day’s people used to use grindstone which is a mortar (rubbu rolu) for grinding the pickles. This gives the pickle a different taste and flavors will be so attached. But now a day’s no one is using this because of lack of time. So you can use mixer grinder for grinding the pastes.

Since it is winter season everyone likes to start the meal with spicy chutney.  Ridge gourd or beerakaya pickle and tomato pickle are the most common pickles you can found in the Indian houses. Without preparing the curries the meal will go off with only these pickles. These will add a good side dish in breakfasts. Consuming of ridge gourd is having lot of health benefits like cures jaundice, controls diabetes, excellent blood purifier, helps in weight loss, improves immune system and give good skin. How to Make

Step 1: Wash the ridge gourd and cut them into small pieces. (Don’t peel of the skin before cutting into pieces because the skin adds more taste to the pickle)

Step 3: Take a fry pan on stove and add 2tbsp of oil to it. Give a medium flame.

Step 4: After oil getting hot add green chilies. Fry them till they become golden in color.

Step 6: After frying collect the green chilies into a jar.

Step 7: In the same pan add 2tbsp of oil and put the ridge gourd pieces.

Step 8: Fry them also till they the ridge gourd pieces changes color. Collect this into a plate.

Step 9: Same way put remaining 1 tbsp of oil in the pan and fry the tomato pieces.

Step 11: Take the fried green chilies jar and add tamarind, salt, garlic cloves and cumin seeds.

Step 2: Add oil to it. After oil getting hot add green chilies and coriander seeds.

Step 5: Cut the tomatoes into medium pieces.

Step 6: Add 2tbsp of oil and put the tomato pieces.

Step 10: Now add fried tomato pieces and just give slight grind, so that the ingredients mixes well.

Step 5: Now open the lid and collect the cooked potatoes into separate plate.

Step 6: Start removing the peel of potatoes. And cut the potatoes into medium size pieces. Keep them a side.

Brinjal masala curry – Traditional south indian famous brinjal masala dish recipe

Here is the one more south Indian style dish brinjal masala curry. Brinjal is called as the king of vegetables. It is having the common names like egg plant or aubergine or baingan. Usually brinjals varies in size like round, cylindrical and even long. Not only the size but also we can see different colors of brinjals like light purple, white and light green shade. Most of the people like to eat round brinjals (gutti vankaya). This brinjals look great in shape and size and gives an elegant taste when mixed with ingredients. Some like to eat this gutti vankaya (brinjals) fry, brinjal stuffed with red chili powder, brinjal curry, brinjal gravy and many more varieties.

Brinjal is one of my favorite vegetable. Today I am going introduce you the delicious brinjala masala curry (gutti vankaya masala curry). This is best eaten with chapathi or hot rice. It is easy to prepare and this brinjal won’t take much time to cook. Start preparing this spicy dish at your kitchen and serve this tasty food item to your family members.

Step 1: Wash the brinjals with fresh water neatly.

Step 2: Take a bowl and fill half with water.

Step 3: Add 1tbsp of salt into the water.

Step 4: Take brinjals and start cutting them with knife as shown in the image.

Step 6: Cut the onions and green chilies. Keep this a side.

Step 7: Cut the ginger into small pieces and add to jar.

Step 8: Now add garlic cloves also to the jar. And grind the ginger and garlic to fine paste. Keep this a side.

Step 9: Take a fry pan on stove add oil to it. Give a medium flame to the pan.

Step 10: After oil getting hot add mustard seeds, channa dal and cumin seeds.

Step 11: Fry it till the spiced gives pop sound. Now add curry leaves.

Step 12: Add onions and green chilies to it.

Step 14: Now add ginger garlic paste to the onions.

Step 15: Fry it nicely. Now add brinjal pieces which we soaked in salt.

Step 17: Mix the ingredients and add 1 glass of water.

Step 18: Let the brinjals cook in the water for 10 minutes. Cover the pan with lid.

Step 19: Turn off the flame.

Step 20: Garnish with coriander leaves.

Note: If you won’t soak the brinjal pieces in salt water the brinjals turns color. So better follow the process and taste this yummy recipe.

Gongura or sorrel leaves are the king of the green leaves. This gongura is also called with sorrel leaves, pulicha keerai, hibiscus cannabinus and ambadi in different languages. We can gain two varieties in this sorrel leaves one is green leaf and other is red variety. This red variety sorrel leaves will give sour taste but good for health. Gongura is famous in Andhra so it is called with name Andhra mother. If you have plan of visiting Andhra Pradesh in india then don’t forget to taste this gongura pickle.

The leaves of sorrel are used in making of pickles, biryani, curries and also a flavor in meat dishes like chicken gongura or mutton gongura. And I like gongura dal or sorrel dal which gives a different taste and takes me too high while eating with hot ghee with rice. If you visit the restaurants in Andhra you will find the gongura pickle is served to you as a side dish for any biryani or fried rice items. Especially Guntur district in Andhra Pradesh is famous for gongura or sorrel leaves where you can find the fresh and natural sorrel leaves.   • Green chilies – 20

  • Tomatoes – 2
  • Temper seeds – 2tbsp
  • Red chili powder – 2tbsp

  • Cumin seeds – 1tbsp
  • Tamarind – small lemon size
  • Coriander leaves
  • Oil – 5tbsp
  • Red chilies – 2
  • Curry leaves

How to Make

Step 1: Wash the gongura / sorrel leaves 4 – 5 times in water. Keep this a side.

Step 2: Take a vessel add green chilies to it.

Step 3: Put the washed gongura / sorrel leaves on green chilies.

Step 4: Keep the tamarind on the leaves. Cut the tomatoes into pieces and place those pieces on leaves.

Step 5: Pour tea glass of water into it.

Step 6: Keep this vessel on stove and give a medium flame.

Step 7: Cover the vessel with a lid. Allow it to cook till 15 minutes. You can observe the water disappears from the leaves.

Step 9: Now collect the remaining ingredients cooked green chilies and tamarind into a jar.

Step 10: Add salt, cumin seeds, red chili powder, cooked tomatoes and garlic cloves to the jar.

Step 11: Grind all the ingredients nicely to a smooth paste.

Step 12: Add this paste into a vessel containing cooked gongura / sorrel leaves.

Step 13: Add coriander leaves also. Start mixing the paste and cooked gongura / sorrel leaves as shown in below figure.

Step 14: Keep this vessel a side.

Step 15: Take small vessel on stove for tempering. Add oil to it.

Step 16: After oil getting hot add tempering seeds and red chilies.

Step 17: Fry them in the oil for 3 minutes. Add curry leaves.

Step 18: Now put the gongura paste which we kept a side into this oil.

Note: If you like you can add onion pieces to the gongura pickle. It tastes good.

Lemon pickle is called in different names like Nimboo ka Achar or Nimakayala uragaya pachadi. I am great pickle lover. Without the pickle my meal would be incomplete. Not only me most of the people start their meal with tasty red chili pickles. So for all the pickle lovers we are presenting the famous lemon pickle which is sour in taste. This can be eaten as a side dish in tiffins or in hot white rice or in curd rice. In Andhra if you order the curd rice in restaurants then they serve the curd rice with lemon pickle. This is best combination for curd rice. Nimakaya pachadi is tongue tickling pickle. Some won’t use oil in making of this pickle but I have taken it as an ingredient. Little piece of pickle can make the meal more interesting. Pickle is the model part for any Indian meal.

We use lemon more during summers in making sharbats as refreshment and for instant energy. The aroma of this yellow color round lemons will be awesome. Some people smell the lemon in travelling to avoid vomiting sensations. Readymade pickles are lot floating in the market but the taste which we made at home and prepared by others would be completely different. Don’t know what actually they use the ingredients in making and storing the pickles that why I always prefer eating the pickles which are homemade.

I have grabbed this lemon pickle recipe from my mom and started preparing at home. You can’t make this pickle instantly because it is time taking process. Why because the lemons skin will be hard. Before adding the spices the lemon pieces are soaked by adding salt and turmeric. The technique lies in how you cut the pieces and amount of salt and red chili powder. Step 1: Wash the lemons and rub the lemons in dry cloth.

Step 2: Let the lemons dry for 5 minutes.

Step 3: Clean the cutter with cloth so that no water content present on the cutter.

Step 4: Now start cutting the lemons into pieces as shown in image.

Step 5: Take a glass jar or plastic container. Put the lemon pieces into it.

Step 6: Add turmeric, red chili powder, garlic cloves, mustard seed powder, oil and salt to the pieces.

Step 7: Mix well all the ingredients.

Step 8: Close the container with lid and keep it stored for 3 days.

Step 9: Take 6 lemons, squeeze the juice of it.

Step 11: Mix them all. Taste the salt if required add it.

Step 12: Leave it for 10 days. Then start tasting the pickle.

It can be stored for 3 – 4 months if you store with proper order. Water content should not touch to this pickle. So be careful while taking the pickle out from container. Close the container with tight lids. Make sure that the containers, spoons and jar which you are using to store the pickle are moisture free, if not the pickle will get spoiled.

Procedure:

Step 1: Peel the skin of carrot and cut into small pieces

Step 2: Take a bowl, add carrot pieces, salt as required and turmeric powder.

Step 3: Stir it well and set the bowl in the sun for a day.

Step 4: Later, check salt and add required amount of it.

Step 5: Add chilli powder, lemon juice, hind powder and stir it well.

Step 6: Add mustard seeds powder, jeera powder and fenugreek seeds powder and stir it well.

Step 7: For tempering, heat oil and add mustard seeds, urad dhal and curry leaves.

  • Oil (required for fry)
  • Eggs – 2

How to make Erachi pathiri with mutton keema

Procedure

Step 1: Take mutton keema in a bowl add salt and turmeric to it. Now cook it on low flame.

Step 2: Take another pan add oil and heat it. Add onion grate, ginger grate, garlic grate and green chili grate.

Step 3: Fry the grates nicely in the oil.

Step 4: Now add mutton keem that you kept a side in other bowl to this fried grates.

Step 5: Add required salt again and allow it to fry till the mixture becomes dry.

Step 6: Put some coriander grate and turn off the flame. Keep the pan a side.

Step 7: Take well bottomed bowl add maida flour. Start mixing the maida with required water.

Step 8: Remember you need to mix the flour like how you do for chapathi.

Step 9: Start making small size balls with mixed maida flour.

Step 10: Press the balls like thin puris (round shaped).

Step 11: Now keep mutton keema mixture which you have prepared before in the center.

Step 14: Add elachi powder, sugar in egg. Beat the egg by mixing the ingredients.

  • Basmathi rice – 1 ½ cup

How to make Keema pulav / Pulao

Procedure

Step 1: Take basmathi rice in a bowl and soak it for ½ hour. Pour down the water.

Step 2: Add oil in a big pan and heat it.

Step 3: Add cinnamon, cumin seeds, black pepper, cloves, elachi, ginger garlic grate, onion pieces, green chilli pieces and keema into the oil.

Step 4: Allow them to fry for some time. Now add ginger garlic paste, red chili powder, tomato pieces and mint grate to the mixture.

Step 5: Fry it nicely by stirring slowly.

Step 6: Now pour three cups of water to it and add salt.

Step 7: Add soaked basmathi rice into this water and mix them well.

Step 8: Add garam masala into it and mix it well.

Step 9: Cover the bowl with lid and allow to cook rice. Check if the rice is half cooked.

Step 10: Now cover the lid and slow down the flame. Allow it to cook for 15 minutes.

Step 11: Turn off the flame and garnish with coriander leaves and mint leaves.

Method of making

  1. Take a pan, add 2tb-spoons of olive oil turn on the stove and bring it to medium flame.
  2. Once the oil is heated add chopped onions, celery and garlic cloves mashed into the pan and mix it well.
  3. Take 1 medium size carrot chop it finely and add into the pan.
  4. Now add salt, coriander and cumin powder to it and mix well.
  5. After mixing add 3 cups of vegetable stock into the pan and cover it using the lid.
  6. Let it cook for 10mins.
  7. Then add the drained sweet corn and cover it again with the lid, let it be for more 10mins.
  8. Once it is cooked, shutdown the stove, remove the vegetable stock into the bowl.
  9. Now, blend all the vegetables cooked, add some vegetable stock if required and make it a fine paste.
  10. Take another pan add the vegetable stock from he bowl
  11. And the paste into the pan, stir well.
  12. Add 3tbspoons of sweet corn and bell peppers to it, let it cook for 10-15 min

Recipe of Barbecued Tandoori Chicken

  • 4 free-range chicken legs
  • 4 boneless and skinless free-range chicken thighs
  • 3 skinless free-range chicken breasts, cut into large pieces
  • Juice of ½ lemon
  • 1 tbsp paprika
  • 6  crushed garlic cloves
  • Piece of fresh ginger
  • 3 tbsp sunflower oil, plus extra for brushing
  • 1½ tsp ground cardamom seeds
  • 2 tbsp garam masala
  • 250ml yogurt
  • 40g unsalted butter, melted

Preparation method

  1.  Make few deep slashes on both sides of each chicken leg and thigh, and place it in a large glass bowl with the breast pieces. Sprinkle lemon juice, paprika and salt. Rub and leave aside for 30 minutes.
  2. Blend yogurt, ginger, garlic, cardamom, and garam masala into a smooth paste.
  3. Pour the mixture over the chicken and leave it to marinate for at least 4 hours.
  4. Light the charcoal barbecue, at about 30 minutes before cooking. Preheat the gas barbeque for 10 minutes.
  5. Lift the chicken pieces and thread them onto a long metal or bamboo skewers.
  6. Brush the chicken  and grate with oil
  7.  Place the skewered chicken and the legs onto the grate and cook directly over a high heat for 4 minutes on each side. Keep turning occasionally to get charred here and there.
  8. Remove the chicken from the grate and brush it with oil again. Put off the middle burner or push the coal on either side of the grate. Place it again on the grate and cook with indirect high heat for 3-5 minutes.
  9. Serve with mint ratio, warm coriander nana bread and lemon wedges

  • Chicken – 1.5 lb –5 leg piece
  • Low fat Yogurt– 1 cup
  • Onion – 1
  • Lime – 1/2
  • Garlic – 1 clove
  • Ginger – 1/2 inch
  • Green Chili – 2
  • Garam Masala – 1 1/2 tsp
  • Salt – 1 tsp or as per taste
  • Red food color + Orange Food Color (Kesari powder) – few large drops

Preparation method

  • Wash the chicken legs. Create 2 deep slits on each side of the leg.
  • Massage each piece of chicken with salt and lemon and leave it in the fridge for 30 minutes.
  • Blend yogurt/curd, garam masala, ginger, garlic, 1/2 tsp salt, green chili, sliced onion into a smooth paste.
  • Add a few drops of food color and a few drops of water to the leftover lemon juice. Bring out the chicken pieces from the fried and brush it with the food color.
  • Pour the smooth paste in a bowl or freezer bag. Put each piece of chicken, mix it well. Close the bowl or zip the freezer and leave it in the fridge for at least 8 hours or more.
  • Heat the oven to the highest temperature. Line a cookie, jelly pan with aluminum foil and place the marinated chicken pieces on it.
  • Place the tray in the center rack of the oven and bake for 15 minutes. Remove and apply the marinade paste over the pieces with a brush or spoon and bake for another 10 minutes.
  • Pull the tray out and let it cool.
  • Serve the chicken  after wrapping each piece with an aluminum foil  along with sliced onion, lemon wedges, and spicy green chutney.

  • Jaggery (Bellam) = 1kg

How to prepare rice cake / ariselu

Step 1 : Take the rice and soak it for two to three days.

Step 2: Clean the rice 2 times for a day. This result to avoid odd smell.

Step 3 : Remove the soaked rice and place the rice on a clean dry cloth and make it dry for 15min.

Step 4 : Grind or blend the wet rice to smooth powder.

Step 5: Take 1 ltr of water in a pan and mix the water with jaggery by continuously mixing.

Step 6 : Let that liquid make strong. Check the strongness by touching the liquid.

Step 7 : Off the flame and add 2 tbsp of ghee and Seasame seeds

Step 8: Now mix the rice flour into the jaggery liquid slowly till it becomes thick.

Step 9: Mean while heat the oil in small pan.

  • Corn flour (corn starch) = 2tbsp

Step 1: Boil 2 cups of water in a pot
