Coconut milk rice is the favorite dish for all vegetarian lovers. Coconut milk plays a major role in preparing this tasty rice item. Usually we used to prepare instant rice dishes like fried rice or vegetarian biryani rice or chitrannam with rice but this coconut milk rice is completely different among all these. Rice and coconut can be found everywhere throughout the world. Preparing of this dish is simple and it is mostly prepared in the southern regions of India. This tasty coconut milk rice doesn’t need any side dish; you can eat it on its own. If you like you can add vegetables like peas, beans, carrot etc. Choose the vegetables that don’t need much cooking.
In some regions people use mostly coconut milk and oil for cooking food. This gives both taste and health. Use fresh coconut for making milk. Make sure the pulp is taken out completely. Add required milk and proper water to rice, this is the point to remember because the taste lies in it. Here is the recipe of tasty coconut milk rice.
Coconut milk rice
- Coconut – 1
- Rice – 4 cups (2 glasses)
- Tomatoes – 2
- Onions – 2
- Ginger garlic paste – 1 tbsp
- Garam masala – 1 tbsp
- Green chilies – 4
- Cardamom – 2
- Cinnamon sticks – 2
- Cloves – 4
- Coriander leaves
- Curry leaves
- Salt (required)
- Oil – 4tbsp
How to Make
Step 1: Wash the rice and soak them in water for ½ hour.
Step 2: Meanwhile break the fresh coconut and make it into small pieces.
Step 3: Collect the coconut pieces into the jar and add 2 glasses of water.
Step 4: Blend it into a fine paste.
Step 5: We need to extract milk from obtained coconut paste, for that use net for filtering the paste and extract the milk.
Step 6: Collect the obtained milk and keep it a side.
Step 7: Chop the onions, tomatoes and green chilies. Keep this also a side.
Step 8: Wash the coriander and curry leaves.
Step 9: Take a rice cooker cooking vessel. Pour down the water from rice and add the soaked rice into the vessel.
Step 10: Pour the coconut milk into the rice along with 2 glasses of fresh water.
Step 11: Add required salt to it. Mix it. Keep this vessel a side because we need to prepare masala.
Step 12: For preparing masala take a pan on stove and give a medium flame.
Step 13: Add oil to pan. After oil getting hot add the spices cardamom, cloves and cinnamon sticks.
Step 14: Now put the onions and green chilies into the oil. Fry them till the onions turn yellow in shade.
Step 15: Put the ginger garlic paste into it and fry it for 2mins.
Step 16: Add chopped tomatoes, curry leaves and coriander leaves.
Step 17: Mix it well. After 5mins turn off the flame and put this mixture into the coconut milk and rice vessel.
Step 18: Mix the rice. Add garam masala powder and mix it. Close the cooker with lid and cook the rice.
Step 19: Now the tasty coconut milk rice is ready. Serve the rice into a plate and garnish with coriander leaves.
