How to cook amaranth leaves fry

Let us learn how to cook the amaranth leaves fry. Amaranth leaves are sub-divided into four types. They are Amaranth blitum, amaranth dubius, amaranth tricolor and amaranth cruentus. This plant is cultivated in many parts of India. Seeds of amaranth leaves are used in making popcorn. Amaranth leaves are cooked in various methods. Amaranth leaves fry is good combination with roti fry.


  • Amaranth leaves- 1 bunch
  • Oil- ¼ cup
  • Grated coconut- 2 spoons
  • Chopped onions- ½ cup
  • Chopped green chilli- 1 spoon
  • Red chillies- 4
  • Urad dhal- ½ spoon
  • Chilli powder- ½ spoon
  • Turmeric powder- pinch
  • Mustard seeds- ¼ spoon
  • Cumin seeds- ¼ spoon
  • Besan gram- ½ spoon
  • Garlic – 3 pods
  • Curry leaves- 1 spring
  • Cashew nuts- ½ cup


Step 1: Clean the amaranth leaves bunch and cut into small pieces.

Step 2: Take a pan, heat some oil.

Step 3: Add cumin seeds, red chillies, besan gram, urad dhal ,mustard seeds, curry leaves and fry them.

Step 4: Add chopped onions,garlic  and green chillies and fry them till onion turn into brown colour.

Step 5: Add amaranth leaves and leave it for 5 min.

Step 6: Take another pan, fry grated coconut and cashew nut in oil for 2 min.

Step 7: Add salt, chilli powder and turmeric powder to amaranth leaves fry.

Step 8: Off the flame, add grated coconut and cashew nuts to curry and place a lid

Step 9: Leave it for 2 min.

Step 10: Serve the amaranth leaves fry in a bowl.
