Apricot is fully orange colored fruit originally from china with beta carotene and fiber. Beta carotene helps to protect low density lipoprotein cholesterol from oxidation. The scientific name is prunus Armenian. Apricot contains nutrients such as vitamin A which is powerful anti-oxidant. Apricot is the rich source for good dietary fiber and potassium. Apricot contains photochemical called carotenoids. These compounds give red, yellow and orange color to the fruit.
- 500 gm of unsalted soften butter
- ¾ cup of sugar
- 2 beaten eggs
- 5 cups of flour
- 2 table spoons of baking powder
- ½ tea spoon salt
- 1 cup toasted almonds
- 1 ½ cup apricot, coconut toasted
- ½ jam of apricot
Step 1: Mix the butter and sugar in processor until it become soft and creamy. Add eggs to them
Step 2: Take a bowl add flour, baking powder and salt mix them thoroughly. Add apricot, almonds and coconut toast to the mixture.
Step 3: Place the dough in a plastic wrap and refrigerate for 1 hour.
Step 4: Preheat for 350 degrees.
Step 5: Shape the dough into circular balls one after the other.
Step 6: Press the center of each circular ball. Pour some apricot jam.
Step 7: Bake them for 15-20 min.
