Parwal is the most popular healthy vegetable. It is rich in carbohydrates, vitamin A and C. Parwal increases the immunity during winter season. It is majorly cultivated in the north and eastern part of India. It can be eaten by cooking with lot of onions and spices. Parwal is also called as green potato in india. It is called in different names as parwal/parval, potol and parol. Lets see the delicious parwal do pyaza recipe.
Method of preparation
- Oil = 4tbsp
- Tomato puree = 2tbsp
- Roasted cumin powder = ½ tbsp
- Garam masala powder=1/2 tbsp
- Parwal = 10
- Red chillies= 4
- Cinnamon = 1 inch
- Onion = 2 cups
- Turmeric powder = ½ tbsp
- Garam masala powder = ½ tbsp
- Salt, lemon juice = 2tbsp
- Thick yogurt = 2tbsp
- Garlic = 5 cloves
- Cardamom (green, black) = 2
- Black peppercorns = 5
- Cloves = 4
- Garam masala = ½ tbsp
- Fresh coriander
Step 1: Take a parwal wash them neatly and peel into stripes.
Step 2: Remove the hard seeds while cutting them into pieces.
Step 3: Take a pan add ¼ cup of water and add parwal to it.
Step 4: Let it cook till the parwal becomes soft. Cover the pan.
Step 5: Put oil in a heavy bottom pan. When the oil is hot add peppercorns, cloves, red chillies, green cardamom, cinnamon and black cardamom.
Step 6: Fry for 20 seconds. Now add onions to it.
Step 7: Add garlic and ginger to the onions and fry till the onions becomes golden brown.
Step 8: Put yogurt and tomato puree to it. Cook for a minute.
Step 9: Add turmeric powder, salt, cumin powder, coriander powder and garam masala.
Step 10: After adding all this add ½ cup of water and cook it for 2 minutes.
Step 11: Add parwal and mix well.
Step 12: Add ¼ cup of water and cover the pan. Cook the parwal for 15 minutes in low heat till done.
Step 13: Keep an eye on it till the water obsorbs. Then add lemon juice and mix it well.
Step 14: Dress it with coriander and serve it hot.
