How to make rasamalai / rasagula at home

Many people love to eat this popular dessert rasamalai / rasagula but most of them prefer to buy in shops. Preparing rasamalai / rasagulla at home is easy and good for health. Rasamalai is the famous Indian dessert with creamy milk flavour. Rasamalai is prepared using milk and sugar syrup. Rasamalai looks more attractive when we add topping to it. Let us learn how to make this delicious Indian desert at home.


For paneer balls:

  • Milk- 1 litre
  • Lemon juice – 2 spoons

For sugar syrup:

  • Sugar- 5 cups
  • Water- 5 cups
  • Cardamom powder- 1 spoon
  • Saffron- ½ spoon
  • Milk-1 cup

For toppings:

  • Chopped almonds- ¼ cup
  • Chopped pistachio- ¼ cup
  • Kesar- ½ spoon


To make paneer balls

Step 1: Boil milk in long bottomed vessel at medium flame.

Step 2: After milk boils, add lemon juice to milk

Step 3: After some time, milk changes into curdles and water in it gets separated.

Step 4: Using cotton cloth squeeze milk curdles tightly till the water comes out completely.

Step 5: Later spread milk curdles in a plate.

Step 6: Mix it well into smooth dough and make into small balls.

Step 7: Press the panner balls evenly.

Step 8: Take a bowl of water and add sugar to it.

Step 9: Add paneer balls to sugar water.

Step 10: In a pressure cooker, cook paneer balls in sugar water for 5min till whistle comes.

Step 11: Open the lid after pressure comes out, you will observe that paneer balls expands in size.

To make creamy milk:

Step 1: Boil milk on low flame

Step 2: After milk boils, add sugar and some water leave it for 5min till sugar dissolves.

Step 3: For flavour, add cardamom powder and kesar to syrup.

Step 4: Now add syrup to paneer balls.

Step 5: Add toppings (pistachio, almond) to rasamalai.

Step 6: Store rasamalai / rasagula in refrigerator for 1hr.

Step 7: Serve delicious sweet in a bowl.
