How to make turai chutney / ridge gourd chutney

Turai is commonly called as ridge gourd. It is dark green color vegetable with white pulp inside and white seeds. Turai/ ridge gourd is fibre content vegetable with essential nutrients, vitamins and low cholesterol level. Let us see how to make this turai/ridge gourd chutney at home.


  • Turai/ridge gourd – 3 cups
  • Oil-1/4 spoon
  • Dried red chilli-3
  • Curry leaves- 1 spring
  • Salt to taste
  • Turmeric powder- pinch
  • Green chilli- 3
  • Tamarind paste- 2 spoons
  • Jeera – 1 spoon
  • Mustard seed- ¼ spoon
  • Urad dal- ½ spoon
  • Besan gram -1/2 spoon
  • Garlic- 3 cloves


Step 1: Peel off the skin of ridge gourd. Cut into small pieces.

Step 2: Take a pan. Add some oil and fry the ridge gourd, green chilli, garlic and jeera. Add a pinch of turmeric powder.

Step 3: In a mixer, Take all the ingredients in a mixy jar.

Step 4: Add little amount of salt to taste and tamarind paste and grind them well into a thick paste.

Step 5: For tempering, take another pan, add few spoons of oil.

Step 6: Fry mustard seeds, urad dal, besan gram, curry leaves, dried red chilli.

Step 7: Add tempering to turai chutney/ridge gourd.
