My home state Andhra Pradesh is very popular for eating spicy food especially pickles. We usually make lot of instant pickles by using vegetables that are mostly consumed within two days. I have used ridge gourd or beerakaya and tomatoes for making instant pickles. These can be eaten with hot rice or as a great side dish for dosa. People follow different ways for preparing instant pickles. Here I have showcased the recipes which are guided by my mom. When these two pickles are cooked by adding right Indian spices it really gives a nice taste.

These pickles need a main ingredient called green chilies. These chilies add spiciness to the chutneys. There is no need of adding red chili powder. Previous day’s people used to use grindstone which is a mortar (rubbu rolu) for grinding the pickles. This gives the pickle a different taste and flavors will be so attached. But now a day’s no one is using this because of lack of time. So you can use mixer grinder for grinding the pastes.

Since it is winter season everyone likes to start the meal with spicy chutney.  Ridge gourd or beerakaya pickle and tomato pickle are the most common pickles you can found in the Indian houses. Without preparing the curries the meal will go off with only these pickles. These will add a good side dish in breakfasts. Ridge gourd is my favorite vegetable. People use this vegetable for preparing snacks, curries and pickles. Today I would like to introduce how to make ridge gourd instant pickle at home. Remember not to peel the skin of ridge gourd because it contains lot of vitamins and gives more taste too.

Consuming of ridge gourd is having lot of health benefits like cures jaundice, controls diabetes, excellent blood purifier, helps in weight loss, improves immune system and give good skin.   • Ridge gourd/ Birakayalu – 3
  • Tomatoes – 3
  • Green chilies – 30
  • Garlic cloves – 20
  • Oil – 5tbsp
  • Tamarind – lemon size
  • Coriander leaves
  • Cumin seeds – 1 ½ tbsp
  • Salt (required)

How to Make

Step 1: Wash the ridge gourd and cut them into small pieces. (Don’t peel of the skin before cutting into pieces because the skin adds more taste to the pickle)

Step 2: Cut the tomatoes also and keep it a side.

Step 3: Take a fry pan on stove and add 2tbsp of oil to it. Give a medium flame.

Step 4: After oil getting hot add green chilies. Fry them till they become golden in color.

Step 5: Cover the lid and fry if not the chilies will burst and come out from the oil.

Step 6: After frying collect the green chilies into a jar.

Step 7: In the same pan add 2tbsp of oil and put the ridge gourd pieces.

Step 8: Fry them also till they the ridge gourd pieces changes color. Collect this into a plate.

Step 9: Same way put remaining 1 tbsp of oil in the pan and fry the tomato pieces.

Step 11: Take the fried green chilies jar and add tamarind, salt, garlic cloves and cumin seeds.

Step 14: Add coriander leaves and collect the obtained ridge gourd pickle into a bowl.

  • Tamarind – lemon size

How to Make

Step 1: Take a thick bottom pan on stove. Give a light flame.

Step 2: Add oil to it. After oil getting hot add green chilies and coriander seeds.

Step 5: Cut the tomatoes into medium pieces.

Step 6: Add 2tbsp of oil and put the tomato pieces.

Step 8: Take the jar which containing fried green chilies and add tamarind, cumin seeds, salt, garlic cloves and coriander leaves.

Step 9: Grind them into a fine paste.

Step 10: Now add fried tomato pieces and just give slight grind, so that the ingredients mixes well.

Step 3: Cover the lid of pressure cooker and keep it on stove. Give a medium flame and cook till it gives 5 whistles.

Step 5: Now open the lid and collect the cooked potatoes into separate plate.

Step 6: Start removing the peel of potatoes. And cut the potatoes into medium size pieces. Keep them a side.

Brinjal masala curry – Traditional south indian famous brinjal masala dish recipe

Here is the one more south Indian style dish brinjal masala curry. Brinjal is called as the king of vegetables. It is having the common names like egg plant or aubergine or baingan. Usually brinjals varies in size like round, cylindrical and even long. Not only the size but also we can see different colors of brinjals like light purple, white and light green shade. Most of the people like to eat round brinjals (gutti vankaya). This brinjals look great in shape and size and gives an elegant taste when mixed with ingredients. Some like to eat this gutti vankaya (brinjals) fry, brinjal stuffed with red chili powder, brinjal curry, brinjal gravy and many more varieties.

How to Make

Step 1: Wash the brinjals with fresh water neatly.

Step 2: Take a bowl and fill half with water.

Step 3: Add 1tbsp of salt into the water.

Step 4: Take brinjals and start cutting them with knife as shown in the image.

Step 6: Cut the onions and green chilies. Keep this a side.

Step 7: Cut the ginger into small pieces and add to jar.

Step 8: Now add garlic cloves also to the jar. And grind the ginger and garlic to fine paste. Keep this a side.

Step 9: Take a fry pan on stove add oil to it. Give a medium flame to the pan.

Step 10: After oil getting hot add mustard seeds, channa dal and cumin seeds.

Step 11: Fry it till the spiced gives pop sound. Now add curry leaves.

Step 12: Add onions and green chilies to it.

Step 14: Now add ginger garlic paste to the onions.

Step 15: Fry it nicely. Now add brinjal pieces which we soaked in salt.

Step 17: Mix the ingredients and add 1 glass of water.

Step 18: Let the brinjals cook in the water for 10 minutes. Cover the pan with lid.

Step 19: Turn off the flame.

Step 20: Garnish with coriander leaves.

Note: If you won’t soak the brinjal pieces in salt water the brinjals turns color. So better follow the process and taste this yummy recipe.

We can gain two varieties in this sorrel leaves one is green leaf and other is red variety. This red variety sorrel leaves will give sour taste but good for health. Gongura is famous in Andhra so it is called with name Andhra mother. If you have plan of visiting Andhra Pradesh in india then don’t forget to taste this gongura pickle.

The leaves of sorrel are used in making of pickles, biryani, curries and also a flavor in meat dishes like chicken gongura or mutton gongura. And I like gongura dal or sorrel dal which gives a different taste and takes me too high while eating with hot ghee with rice.   • Green chilies – 20

  • Tomatoes – 2
  • Temper seeds – 2tbsp

  • Tamarind – small lemon size
  • Coriander leaves
  • Oil – 5tbsp

How to Make

Step 1: Wash the gongura / sorrel leaves 4 – 5 times in water. Keep this a side.

Step 2: Take a vessel add green chilies to it.

Step 3: Put the washed gongura / sorrel leaves on green chilies.

Step 4: Keep the tamarind on the leaves. Cut the tomatoes into pieces and place those pieces on leaves.

Step 6: Keep this vessel on stove and give a medium flame.

Step 7: Cover the vessel with a lid. Allow it to cook till 15 minutes. You can observe the water disappears from the leaves.

Step 9: Now collect the remaining ingredients cooked green chilies and tamarind into a jar.

Step 10: Add salt, cumin seeds, red chili powder, cooked tomatoes and garlic cloves to the jar.

Step 12: Add this paste into a vessel containing cooked gongura / sorrel leaves.

Step 13: Add coriander leaves also. Start mixing the paste and cooked gongura / sorrel leaves as shown in below figure.

Step 14: Keep this vessel a side.

Step 15: Take small vessel on stove for tempering. Add oil to it.

Step 16: After oil getting hot add tempering seeds and red chilies.

Step 17: Fry them in the oil for 3 minutes. Add curry leaves.

Step 18: Now put the gongura paste which we kept a side into this oil.

Note: If you like you can add onion pieces to the gongura pickle. It tastes good.

Lemon pickle is called in different names like Nimboo ka Achar or Nimakayala uragaya pachadi. I am great pickle lover. Without the pickle my meal would be incomplete. Not only me most of the people start their meal with tasty red chili pickles. So for all the pickle lovers we are presenting the famous lemon pickle which is sour in taste. This can be eaten as a side dish in tiffins or in hot white rice or in curd rice. In Andhra if you order the curd rice in restaurants then they serve the curd rice with lemon pickle. This is best combination for curd rice. Nimakaya pachadi is tongue tickling pickle. Some won’t use oil in making of this pickle but I have taken it as an ingredient. Little piece of pickle can make the meal more interesting. Pickle is the model part for any Indian meal.

We use lemon more during summers in making sharbats as refreshment and for instant energy. The aroma of this yellow color round lemons will be awesome. Some people smell the lemon in travelling to avoid vomiting sensations. Readymade pickles are lot floating in the market but the taste which we made at home and prepared by others would be completely different. Don’t know what actually they use the ingredients in making and storing the pickles that why I always prefer eating the pickles which are homemade.

I have grabbed this lemon pickle recipe from my mom and started preparing at home. You can’t make this pickle instantly because it is time taking process. Why because the lemons skin will be hard. Before adding the spices the lemon pieces are soaked by adding salt and turmeric. The technique lies in how you cut the pieces and amount of salt and red chili powder. So follow the procedure and ingredients list carefully.

  • Red chili powder – ½ cup
  • Salt (required)
  • Oil – ½ cup
  • Garlic cloves – 20
  • Turmeric – 1tbsp
  • Mustard seed powder (if you like) – 1tbsp

How to make nimmakaya nilava uragaya pachadi

Step 1: Wash the lemons and rub the lemons in dry cloth.

Step 2: Let the lemons dry for 5 minutes.

Step 3: Clean the cutter with cloth so that no water content present on the cutter.

Step 4: Now start cutting the lemons into pieces as shown in image.

Step 5: Take a glass jar or plastic container. Put the lemon pieces into it.

Step 6: Add turmeric, red chili powder, garlic cloves, mustard seed powder, oil and salt to the pieces.

Step 8: Close the container with lid and keep it stored for 3 days.

Step 9: Take 6 lemons, squeeze the juice of it.

Step 10: Pour this juice into the lemon jar or container after 3 days.

Step 11: Mix them all. Taste the salt if required add it.

Step 12: Leave it for 10 days. Then start tasting the pickle.

It can be stored for 3 – 4 months if you store with proper order. Water content should not touch to this pickle. So be careful while taking the pickle out from container. Close the container with tight lids. Make sure that the containers, spoons and jar which you are using to store the pickle are moisture free, if not the pickle will get spoiled.

  • Carrots- 4
  • Oil as needed
  • Turmeric powder-pinch
  • Salt to taste
  • Red chilli powder- 2 spoons
  • Hing powder-pinch
  • Lemon juice- 2 spoons
  • Fenugreek powder- 1 spoon
  • Mustard seeds powder- 1 spoon
  • Jeera powder- ½ spoon

For tempering:

  • Mustard seed- ¼ spoon
  • Urad dhal – ¼ spoon
  • curry leaves- 1 spring


Step 1: Peel the skin of carrot and cut into small pieces

Step 2: Take a bowl, add carrot pieces, salt as required and turmeric powder.

Step 3: Stir it well and set the bowl in the sun for a day.

Step 4: Later, check salt and add required amount of it.

Step 5: Add chilli powder, lemon juice, hind powder and stir it well.

Step 6: Add mustard seeds powder, jeera powder and fenugreek seeds powder and stir it well.

Step 7: For tempering, heat oil and add mustard seeds, urad dhal and curry leaves.

Step 8: Sauté it for 2min and off the flame.

Step 9: Add tempering to the carrot mixture and mix it well.

Step 10: Keep in a glass and store overnight.

Step 11: Serve in a bowl to eat.

How to make tomato and coconut soup recipe

Step 4: Allow simmering for 10min at low flame.

Step 5: Add salt as needed, off the flame and keep aside till temperature reduces.

Step 6: Using mixer, mix the tomatoes mixture into fine paste.

Step 7: Serve tomato soup in a bowl, stir it well by adding white pepper powder.

Step 8: Add cream as topping to the soup and garnish with coriander leaves.

  • Coriander grate – 2tbsp
  • Turmeric – ½ tbsp
  • Oil (required for fry)
  • Eggs – 2
  • Sugar – 1tbsp
  • Maida flour – 1 cup

How to make Erachi pathiri with mutton keema


Step 1: Take mutton keema in a bowl add salt and turmeric to it. Now cook it on low flame.

Step 2: Take another pan add oil and heat it. Add onion grate, ginger grate, garlic grate and green chili grate.

Step 3: Fry the grates nicely in the oil.

Step 4: Now add mutton keem that you kept a side in other bowl to this fried grates.

Step 5: Add required salt again and allow it to fry till the mixture becomes dry.

Step 6: Put some coriander grate and turn off the flame. Keep the pan a side.

Step 7: Take well bottomed bowl add maida flour. Start mixing the maida with required water.

Step 8: Remember you need to mix the flour like how you do for chapathi.

Step 9: Start making small size balls with mixed maida flour.

Step 10: Press the balls like thin puris (round shaped).

Step 11: Now keep mutton keema mixture which you have prepared before in the center.

Step 12: Cover the mixture with other puri on the top.

Step 13: Start folding the edges of the puri by pressing both bottom and top puri. Now the pathiri is ready.

Step 14: Add elachi powder, sugar in egg. Beat the egg by mixing the ingredients.

Step 15: Apply this liquid to both sides of pathiri.

Step 16: Take a bottom pan and oil to half of the pan. Start frying pathiris in oil.

Step 17: Remember the pathiri should become light yellow in color.

Erachi pathri is ready to eat now.

Cooking of keema pulav is very easy and it doesn’t take much effort. It is made with fragrant minced lamb cooked in aromatic spices. Then it is cooked again by mixing with basmati rice. No worries just go through the complete procedure which is given below. You will get a cool idea. Keema pulao is healthy with all nutrients, minerals and vitamins.


  • Keema – 200grms
  • Basmathi rice – 1 ½ cup
  • Oil – 2tbsp
  • Cloves – 2
  • Cinnamon stick – 1
  • Elachi – 4
  • Black pepper – 10
  • Cumin seeds – 1tbsp
  • Ginger garlic grate – 2tbsp
  • Onion grate – ½ cup
  • Green chili – 4
  • Garlic ginger paste – 2tbsp
  • Red chili powder – 1tbsp
  • Tomato pieces – 1cup
  • Mint grate – 2tbsp

How to make Keema pulav / Pulao


Step 1: Take basmathi rice in a bowl and soak it for ½ hour. Pour down the water.

Step 2: Add oil in a big pan and heat it.

Step 3: Add cinnamon, cumin seeds, black pepper, cloves, elachi, ginger garlic grate, onion pieces, green chilli pieces and keema into the oil.

Step 4: Allow them to fry for some time. Now add ginger garlic paste, red chili powder, tomato pieces and mint grate to the mixture.

Step 5: Fry it nicely by stirring slowly.

Step 6: Now pour three cups of water to it and add salt.

Step 7: Add soaked basmathi rice into this water and mix them well.

Step 8: Add garam masala into it and mix it well.

Step 9: Cover the bowl with lid and allow to cook rice. Check if the rice is half cooked.

Step 10: Now cover the lid and slow down the flame. Allow it to cook for 15 minutes.

Step 11: Turn off the flame and garnish with coriander leaves and mint leaves.

Tasty keema biriyani is now ready to eat.

How to cook Chciken korma


Step 1: Take the chicken in bowl and wash it with clean water twice.

Step 2: Now add salt, turmeric, lemon juice, black pepper powder, ginger garlic paste to the chicken.

Step 3: Mix all the ingredients and keep a side for half hour.

Step 4: Take thick bottom pan add ghee to it an allow it get hot in low flame.

Step 5: Now add onions, turmeric and fry it till onions get golden brown. Turn off the flame and keep the pan a side.

Step 6: Let the mixture get cool and now add whole mixture in a jar by adding green chilli. Grind it and make it a fine paste.

Step 7: Add this paste to the magnet chicken and mix well.

Step 8: Take curd in a small bowl and add almond powder and coriander spice powder.

Step 10: Now turn on the stove and keep a pan on it. Add ghee to the pan and heat it.

Step 11: Add Cardamom, cloves, cinnamon stick and biriyani leaves and fry it.

Step 13: Mix it well and cook in a low flame. Cover the pan with lid.

How to make Mexican Corn Soup

  • Olive oil – 2tbspoons
  • Onions, chopped – 2 medium size
  • Garlic – 4 to 5 cloves

  • Salt to taste
  • Cumin powder – ½tspoon
  • Vegetable stock – 3 cups
  • Sweet corn – 7 tbspoons
  • Pickled jalapeno, sliced – 1
  • Roosted bell peppers, chopped – 1 medium size

Method of making

  1. Take a pan, add 2tb-spoons of olive oil turn on the stove and bring it to medium flame.
  2. Once the oil is heated add chopped onions, celery and garlic cloves mashed into the pan and mix it well.
  3. Take 1 medium size carrot chop it finely and add into the pan.
  4. Now add salt, coriander and cumin powder to it and mix well.
  5. After mixing add 3 cups of vegetable stock into the pan and cover it using the lid.
  6. Let it cook for 10mins.
  7. Then add the drained sweet corn and cover it again with the lid, let it be for more 10mins.
  8. Once it is cooked, shutdown the stove, remove the vegetable stock into the bowl.
  9. Now, blend all the vegetables cooked, add some vegetable stock if required and make it a fine paste.
  10. Take another pan add the vegetable stock from he bowl
  11. And the paste into the pan, stir well.
  12. Add 3tbspoons of sweet corn and bell peppers to it, let it cook for 10-15 min

How to make dhokla

  • Bengal gram flour/ besan /chickpea flour = 2 cups
  • Yogurt  =1cup
  • Salt   = to taste
  • Sugar  = 1tsp
  • Cooking/baking soda/soda bicarbonate   =  1tsp
  • Semolina = 1tsp
  • Lemon juice = 1tbsp
  • Oil  = 2tbsps
  • Turmeric powder/haldi  = ½ tsp
  • Green chilli, ginger paste  = 1tsp

For Seasoning

  • Mustard Seeds = 1 tsoop
  • Sesame Seeds  = 1 tsoop
  • Chopped Green Chilies  = 1tsp
  • Curry Leaves, chopped  = 2 tbsp
  • Asafoetida  = A Pinch
  • Oil = 2tbsps

For Garnishing

  • Grated Coconut
  • Chopped Coriander Leaves


  1. Take a large empty bowl.
  2. Add gram flour (besan), semolina, yogurt, salt and 1 cup of warm water.
  3. Mix it well, avoiding lumps.
  4. Leave it aside for 3-4 hrs to ferment.
  5. For the gram flour gets fermented, Add green chilli-ginger paste, turmeric powder and mix.
  6. Take small bowl add – spoon of oil, baking soda, lemon juice and mix
  7. Add the mix to the gram flour batter and stir vigorously till it becomes foamy.
  8. Grease a microwave safe bowl with oil, pour this batter into the greased mould and place it in oven on the high power for 5-6min, remove the bowl and check it if the dhokla is not cooked place it again in oven for 1-2 mins.
  9. Remove the bowl for the oven and cool it.
  10. When little cool, cut into the squares.
  11. Heat a pan and add oil.
  12. Later add mustard seeds and fry, when the mustard seeds start splutter add sesame seeds, chopped green chilies, curry leaves and asafoetida(hing).
  13. Fry well and spread this seasoning on the dhokla pieces
  14. Transfer them into the serving bowls and garnish with grated coconut and chopped coriander leaves.

  • water = 5 cups

  • Salt
  • Corflour = 2 ½ tbsp.
  • Spring onions
  • Coriander

Making of sweet corn soup

Step 1: Take a large bottomed vessel.

Step 2: Add water and cream style sweet corn in to the vessel.

Step 3: Chop the cabbage, carrot and beans.

Step 4: Add the chopped vegetables and boiled sweet corn kernels in to mix and let it boil for 5 mins.

Step 5: Take a small bowl and add cornflour of 4 tbsp to vegetable stock and keep a side.

Step 6: Now add the salt and sugar to the simmering soup and boil it for 4 mins.

Step 7: Later add the pepper powder and stir it.

Step 8: Now take the cornflour mixture which is kept aside and mix with soup until the soup gets thick.

Step 9: Switch of the stove and garnish the soup with the coriander and spring onions.

Step 10: Serve it into a soup bowls.

How to make apricot cookies

Apricot is fully orange colored fruit originally from china with beta carotene and fiber. Beta carotene helps to protect low density lipoprotein cholesterol from oxidation.   • ½ jam of apricot


Step 1: Mix the butter and sugar in processor until it become soft and creamy. Add eggs to them

Step 2: Take a bowl add flour, baking powder and salt mix them thoroughly. Add apricot, almonds and coconut toast to the mixture.

Step 3: Place the dough in a plastic wrap and refrigerate for 1 hour.

Step 4: Preheat for 350 degrees.

Step 5: Shape the dough into circular balls one after the other.

Step 6: Press the center of each circular ball. Pour some apricot jam.

Step 7: Bake them for 15-20 min.

How to make amla / gooseberry juice

Step 1: Take the amalas / gooseberries in a bowl and wash neatly.

Step 2: Let the amlas dry for 2 min.

Step 3: Take a pressure cooker and fill it with half cup of water.

Step 4: Keep the bowl which containing the amla into the pressure cooker.

Step 5: Switch on the stove and cover the cooker with a lid.

Step 7: Remove the bowl from the cooker after the pressure and let it cool for some time.
