Ivy gourd / Tindora / Gherkins / Dondakaya Fry
Tindoora or dondakaya is one of the widely consumed vegetable that is available throughout the year. This is a great side dish with sambar or rasam. Ivy gourd is known as dondakaya in telugu, Tindora in gujarati and vargoli or Kheera in hindi. Preparing of this fry is very simple and easy. People follow different procedures to make this dondakaya fry. If you want to make a quick fry then this ivy gourd fry is best choice. You can feel the crunchy texture with a mild spice sweet nutty flavor.
At our home we use to prepare gravy, chutney, curry and fry with ivy gourd. Tindora contains a fabulous mix of complex carbohydrates, vitamins, fibre and minerals which are rich source for good health. This ivy gourd is also classified as a medical herb in traditional thai and ayurvedic medicine.
Dondakaya vepudu is very famous in Andhra that is eaten as a best side dish in sambar or rasam. Here is the easy and quick recipe for you from HOW to make.
- Tindoora / Gherkins / Dondakayalu – ¼ kg
- Bengal gram dal / senagapappu – ½ cup
- Dry Coconut – 50grms
- Red chili powder – 2tbsp
- Cumin seeds – 1 tbsp
- Garlic cloves – 10
- Poppy seeds – 2tbsp
- Oil – 4tbsp
- Salt (required)
Step 1: Take dry coconut, garlic cloves, salt, cumin seeds and Bengal gram dal into a jar.
Step 2: Grind these ingredients into a fine powder. Keep this a side.
Step 3: Cut the Tindoora / Gherkins / Dondakayalu into straight slices as shown in image. Keep the pieces a side.
Step 4: Take a pan on stove, add oil to it. Heat this in low flame.
Step 5: After oil getting hot add poppy seeds.
Step 6: Fry this till the poppy seeds turns yellow in shade.
Step 7: Now put the tindoora / dondakayalu slices which we kept a side before into this poppy seeds.
Step 8: Stir them till the color of tindoora changes. Do this in low flame. Fry them for 10 minutes.
Step 9: Sprinkle little salt on the tindoora.
Step 10: Pour the Bengal gram dal powder which we grinded and kept a side before into the tindoora.
Step 11: Mix it well. After 5 minutes turn off the flame.
Garnish the dish with curry leaves. Crispy ivy gourd with spicy taste is a best side dish for any curry item. Prepare this at home and enjoy the taste of dondakaya vepudu.
Potato fry / Aloo fry
Potato fry is the simple and best recipe to eat or to cook. It is one of the spicy side dish prepared at meal. Fewer ingredients are used in making of this dish. If you prepare sambar then this potato fry will add as a super side dish. Even it is good in dal. This side dish is very commonly prepared at our home. Tempering and seasoning flavor makes the potato fry a unique dish.
Potato fry ingredients
- Potatoes – 4
- Salt (required)
- Oil – ½ cup
- Red chili powder – 1tbsp
- Curry leaves
Step 1: Peel off the potatoes nicely. Wash them with water.
Step 2: Start cutting the potatoes into small pieces as shown in the image.
Step 3: Take a pan put it on stove. Add oil to it. Heat it in low flame.
Step 4: After oil getting hot add potato pieces.
Step 5: Don’t stir immediately. After 2 minutes stir it.
Step 6: Fry the potatoes till them become golden brown in color.
Step 7: Remove the excess oil from potatoes.
Step 8: Add salt and red chili powder to the potatoes.
Step 9: Mix it well. Turn off the flame and add curry leaves.
