Brinjal is the most common vegetable with purple and green color. Brinjal is also called as eggplant. Brinjal pakora is the south Indian recipe. Brinjal is rich source of fiber. Brinjal have lot of health benefits. Brinjal pakora/ eggplant pakora are easy to prepare in simple way. Let us see how to prepare this brinjal pakora in easy manner.
- Besan flour/gram flour- 2 cups
- Rice flour- 3 spoons
- Red chilli powder- 1 spoon
- Brinjal/eggplant – 6
- Coriander powder – 1 spoon
- Coriander leaves- 2 spoons
- Oil to deep fry
- Salt to taste
Step 1: Take brinjal/eggplant and wash them. Cut the brinjal into long halves.
Step 2: Take a bowl add besan flour, salt, red chilli powder, coriander powder, coriander powder. Mix them well using water.
Step 3: Add rice flour to the mix to make pakora crispy.
Step 4: Heat the oil in non-stick kadai.
Step 5: Dip all the brinjal/ eggplant in flour mix and keep aside.
Step 6: Fry brinjal in hot oil till it turns to brown color.
