How to make pistachio phirni / rice pudding

Pistachio nuts are famous snack item and used as ingredient in many desserts. Pistachio nut contains low calories with high nutritional values. Pistachio phirni is prepared with rice flour. pistachio is also known as rice pudding. It is popular north indian dessert. This desert is similar to kheer but the taste of pistachio phirni differs. Pistachio phirni can be prepared at home easily in short time. It is served as special dessert in many occasions. Everyone loves to eat this delicious dessert with pistachio flavour.


  • Rice flour- ½ cup
  • Milk- 4 cups
  • Crushed cardamom- 2 spoons
  • Pistachio- ¼ cup
  • Sugar- 1 1/2 cup
  • Cashew nuts- ¼ cup
  • Raisins- ¼ cup
  • Saffron- few springs
  • Ghee-1/4 cup


Step 1:  Boil milk in a long bottomed vessel on low flame.

Step 2: Add rice flour to milk and mix it well

Step 3: Add sugar to the milk and rice flour, cook it till it become into thick liquid.

Step 4: After it turn into thick liquid add cardamom powder for flavour.

Step 5: Take a pan, heat ghee and fry cashew nuts and raisins into brown colour.

Step 6: Add cashew nuts and raisins to the pudding.

Step 7: Garnish with saffron springs and pistachio.

Step 8: Store in refrigerator for 1hr.

Step 9: Serve the cool pistachio phirni in a bowl.
